Summer is winding down here, but it’s not gone yet, and we’re loving it.
One of my favorite recipes to cool down with lately has been a watermelon granita. I put the following delicious ingredients into a blender (Vitamix, Ninja, regular old blender – whatever you’ve got!): cubed watermelon, fresh mint (we gather it from our backyard, where it grows like a weed since a mint farm used to be located across the valley from us – we honestly can’t get rid of it and don’t mind at all), and ice cubes. Really, that’s all it takes. Pulse until ice is grinded, put a mint sprig in it, and enjoy!
I've also used summer savory instead of mint, which I tried growing in my herb garden this year for the first time, and it's spicy and sweet - it reminds me of vanilla. Have you ever tried savory in a summer drink?
Ingredients:
4 cups cubed watermelon
2 handfuls of ice cubes
Leaves from 2 mint sprigs
4 mint sprigs for garnish
Instructions:
Put watermelon, ice, and mint leaves into a blender.
Pulse until very smooth. Add more ice as desired, if not frozen enough.
Pour into glasses and garnish each with a mint sprig.
Enjoy!
